When you create a new album, are the photos still in the Camera Roll?
Yes, when you create a new album, the photos remain in the Camera Roll as well as in the new album.
I tried this method, and it worked pretty well for my vacation photos! I created albums for each day of the trip.
Make sure to back up your photos regularly. I lost some before I started using iCloud.
I disagree with the idea that sorting by date is the best way. I prefer to tag my photos for easier searching instead of just organizing by date.

You can group your photos by events by creating albums named after specific events, in addition to organizing by date.
